I have not used them myself (hope to check them out soon), but it looks like just what you’re looking for...they do walking tours that explore Cairo’s local visual art and culture scene. They come recommended by CN Traveler, which has yet to steer me wrong.
Also, there’s an art installation coming to the Pyramids this October-November! I went last year and would highly recommend. It’s a really unique way to see an already amazing site. https://www.artdegypte.org/#/details/42?type=exhibition
I’d also recommend walking around Zamalek (neighborhood near downtown Cairo), which is full of art galleries and shops that have beautiful pottery and textiles. I can send some specific recs if that’s something that interests you!
There are a lot of weaving schools on the outskirts of Cairo and in the area near the Saqqara pyramids site. They’ll do rug weaving demonstrations and generally have stores attached. Some of them are kind of a tourist trap, but one of the more reputable ones is the Ramses Wissa Wassef art center: https://instagram.com/wissa.wassef.artcenter?igshid=NTc4MTIwNjQ2YQ==
Finally, if you really want to dig into the pottery scene, definitely consider a day trip to Fayoum! I talk more about it in my monthly meanderings post for July, but it’s full of pottery studios. Fayoum pottery has a distinctive style and you can find it in shops all over Cairo, but I think it’s well worth the 2 hour drive to see the studios in person--they have a nice selection and will do demonstrations. Plus, Fayoum is really beautiful and relaxed.
